Husker Football Tailgate: Week 8 – Northwestern

HOW SWEET IT IS!!! Yes! I’m thrilled that the Cornhuskers seemed to find a rhythm Saturday. Was it because Tommy Armstrong felt comfortable? Was it because Big Red has a great receiving corps? Or because De’Mornay Peirson-El got into the full mix of things? I’ll go with all of the above.
And in keeping with that “sweet” theme, I’ve got a dandy for you this week. Yes, I know it’s an early game for the Huskers at 11 am, but there is always a little after the game tailgate so I went with a dessert instead of another breakfast bake. The original recipe is from Betty Crocker. I tried it out on the office crew (which I do a lot) and they told me I was allowed to make it again and again. It doesn’t take very long to prepare, which I like, but you are going to need to have some milk on hand once you dig into the peanut butter goodness!

PEANUT BUTTER CHEWS
1 pouch peanut butter cookie mix (vegetable oil, egg, water as indicated on the package)
3 cups miniature marshmallows
2/3 cup light corn syrup
1/4 cup butter
2 teaspoons vanilla
1 10 oz bag peanut butter chips
2 cups crisp rice cereal
2 cups salted peanuts
Heat oven to 350 degrees. Spray the bottom of a 13 x 9 pan with non-stick spray. In a large bowl, prepare the cookie mix per the directions on the bag and press into the bottom of the pan. Bake about 12-15 minutes until it’s set. Immediately sprinkle marshmallows over the crust and bake an additional 1-2 minutes until the marshmallows begin to puff. In a 4-quart saucepan, cook corn syrup, butter, vanilla and chips over a low heat, stirring constantly until the chips are all melted. Remove from the heat; stir in cereal and nuts. Immediately spoon cereal mixture evenly over the marshmallow layer. Put it in the refrigerator for 30 minutes and cut into bars and serve.

The Cornhuskers take on the Wildcats. Purple is their color so Purple Punch is the recipe for the jello shot. I was inspired by a summer favorite I enjoy during the CWS. You will need some food coloring to get the shade of purple which you desire.
PURPLE PUNCH
1 package blue/berry jello
1 cup lemonade
1/2 cup chambord
1/2 cup vodka
Heat the lemonade in the microwave and mix it with the jello. Pour in the vodka and Chambord. Add red and blue food coloring until it’s the shade of purple you desire. Pour into shot cups and CHILL! You can always swap out the Chambord with more vodka too.

Northwestern is not going to be an easy game. Mostly because we don’t know which team will show up. The team that got blown up by Iowa or the team that beat Stanford. Huskers will be in their blackout jerseys. I think they are WAY better than last year’s debacle but I will NEVER get used to changing up the helmet. (and when did black become a Nebraska official color?)
Get up early. Get that tailgate handled. Make sure to be good fans. Be LOUD and cheer on the Huskers to another Big Ten victory! And as always, GO BIG RED!
