Husker Football Tailgate Report: Week 4 HOMECOMING

This week is Homecoming. This word means it’s the peak time to show your Husker school spirit so the more red and white you can have at your tailgate the better! The Cornhuskers take on the Southern Miss Golden Eagles. It’s an 11 am start time (UGH!!!) which means it’s a breakfast tailgate menu. Decorate the tailgate with red and white checkered napkins, tablecloths, red solo cups, red iced cookies, and heck why not dip strawberries in white chocolate for added color.

First, a little bit about the other team. Southern Miss is located in Hattiesburg, Mississippi and plays in the Conference USA division. RB Jalen Richard ran for a career high 230 yards in last week’s game and the team comes into Lincoln 2-1. QB Nick Mullens isn’t afraid to toss the rock either. He completed over 300 yards last week as well. I’m sure the Husker Blackshirts are working on their corner issues and he won’t be as successful under the Sea of Red.

One of the fun things about Homecoming is checking out the different floats. I remember spending hours stuffing tissue paper and Kleenex into chicken wire only to have about half of it blow away on the parade route. In order to check out all the designs before kickoff you will need to be on the go so I’m tossing in a “to-go” favorite breakfast slider. It’s great hot, but even at “room temperature” it’s fine.

Husker Ham and Egg Cheese slider

Big Red Breakfast Slider

1 tube Grands butter tasting biscuits

12 oz thinly sliced ham (or chicken or turkey)

1 package thinly sliced swiss cheese

honey mustard dressing

eggs

First, pop open the biscuit tube and bake them according to the package on a non-stick baking pan. While those bake, fry up the eggs. You want to start them out as over medium, but break the yolk so it will fit nicely on the biscuit and not ooze. No one likes messy and scrambled eggs will fall off the slider. Once the biscuits are done, split them in half and put a dollup of honey mustard and a piece of Swiss cheese on each half. If they are still warm the cheese will melt a little. Next place 2 pieces of ham (or chicken or turkey) on the biscuit, top with the fried egg and put back in the oven until the cheese melts. After they come out of the oven, if you wrap them individually in plastic wrap they will stay fresh all day. With the early start time, it’s going to be a long day of activities (including tailgating) so why not toss in something “of the season.” Fall is the season for pumpkin and I’ve got a really easy recipe for muffins. When serving I leave some plain and top some with cream cheese frosting.

Pumpkin Muffins

1 box of yellow cake mix

1 15 oz can of pumpkin (not pumpkin pie mix)

3/4 teaspoon pumpkin pie spice

1/4 cup canola oil

2 eggs

Butter cream frosting

Combine the ingredients (except the frosting, duh) with an electric mixer briefly. If you take more than 4 minutes, it’s too long. Divide it up into paper lined muffin tin and bake at 350 degrees for around 25 minutes. Take them out and let them cool. Spread frosting on them and go! If you’re into fancy, toss a couple of candy corn on top.

Beverage: I’m not saying you have to drink alcohol at an early morning tailgate but if the mood strikes you enjoy my early morning favorite — a Black (or White) Russian coffee. Simply make a the cocktail and add coffee. (Kahlua, vodka and Bailey’s Irish Cream adds the white) There is a mint flavor of Bailey’s that is awesome too.

I’m sure the Huskers have been working hard to fix some of the issues on defense and some on the offense given all those dang dropped passes. I’m not expecting DPE on the field quite yet, but I bet he’s there for the Wisconsin game in a couple of weeks. I’m also hoping we get some more of RB Mikale Wilbon. I think he’s got a little more spark. As for Saturday, you’re still going to need your sunscreen.
