Week 11: Nebraska Cornhuskers Bye Week Tailgate Recap

It’s another Nebraska Cornhuskers bye week so this week I’m supporting my WONDERFUL friends down south in LSU country. It’s #HateBama week. I have been laughing all week as the hatorade flood of rivalry amongst these two teams.
Bottom line, both fan bases are passionate and I know LSU knows how to tailgate!! Is there a better recipe for college football? I don’t think so.

Let’s recap the Big Red Tailgate season so far:
Week 1 –Drumsticks on the grill
You can call them the team of the week aka Gopher legs, Hawkeye legs, etc. You get the idea
Week 2 – Tailgate Morning Casserole and Dark Russian Coffee jello shots
I have to admit I was a little skeptical about these jello shots but they were a huge success and my friends have asked for them on the next morning tailgate.
The key is a good mellow coffee rather than a strong one and whip cream in a can.
Week 3 – Potato Soup and Wickedly Evil Mac N Cheese
My good friend and regular at my tailgates, Russ, and his wife Ruth, sent in this picture of their cooking efforts. They admitted there were no leftovers after the game but to be fair, they have 3 handsome sons that helped out. As the weather turns colder this warm goodness will be showing up again.

Week 4 – Husker Beef Kabobs w Orange Glaze and Big Red & Hurricane hello shots
This week contained my go to recipe on jello shots that can be adjusted for any game or jello color. The Hurricane ones were popular but a stronger shot for sure.
Week 5 – Husker Blackshirt rice krispie bars and the BO PELINI drink
This had the spin on an old favorite to give it that Blackshirt look but there is no stopping you from going back and getting more. My BFF Jeanne J featured the Bo Pelini at her bar, The Play Pen Lounge, but switched up the champagne to the pink champagne for more RED color.

Week 6 – Margarita or Thai Grilled Shrimp, Zucchini & Potato packet, and Sparty themed jello shots
This week I started using recipes from friends that they enjoy at their tailgate. My friend, Linda S (who also shared some bread recipes) tipped me off on the healthy side dish of the zucchini & potatoes. A tailgate is always about friends, right?
Week 7 – Banana Bread & Zucchini Bread & Apple Bread
If you haven’t had a chance to make these, I highly recommend you do. With the bye week there will be plenty of time to stay in and bake. That is unless you are headed to a wedding which is tradition for bye week here in Huskerland. Big thanks to Carrie R, Linda S, and Leslie S for the baked goodies recipes!
Week 8 – Spinach and Chicken with White Sauce & Shrimp and Pancetta Pizza for staygating
Long time Husker and good friend, Brad T traveled from Madison to Chicago to cheer on the Huskers and sent some photos from the chilly tailgate and stadium. THANKS Brad!

Week 9 – Breakfast Lasagna (Italian style) and Bacon & Potato Breakfast Pizza, and Scarlet Cocktail round out the menu
I love to make the bacon & potato recipe and heat it up during the week for a quick breakfast on the go.

Week 10 – Mary’s Spicy Pretzels and Justin’s Yummy Baked Beans w Bacon and Fireball Halloween jello shot
I’ve been hearing a lot from my friends who are making the Fireball jello shot. They definitely warm you up and with cooler temperatures on the way I can see why one might want to stock up.
There was a lot of market testing that went into the recipe so thanks to my friends Dave C and Thom H for taking one for the team. Mary’s pretzels warm you up too, but in a non-hangover way.
Lagniappe – (that’s LSU for a lil something extra) Wishing my Besties in Baton Rouge a hearty GEAUX TIGERS!! against Bama this weekend but I’m cheering on the LSU Baseball team in their Purple & Gold World Series for fall ball. Guest coaches include 3 outstanding former Tigers from last year who are working their way up in the MLB farm system, Tyler Moore, Aaron Nola and Sean McMullen.
