You had better pack some extra supplies this week Husker fans

Many fans have picked this game as the matchup of the season and legitimately so. The Ducks are flocking to town and bring with them a team not as fancy as past years, but one that is still ranked in the Top 25. Big Red still hasn’t cracked the poll yet, but after this week, things could change.

Oregon has a lot of speed and it’s going to be a HUGE test this week. I’m still looking for DPE to cut loose. He didn’t have any opportunities last week but Oregon may test him in the return game. I think if the Cornhuskers can control the number of big plays for the Ducks, there is a good chance they finish 3-0 Saturday. Tommy Armstrong will need to get loose running a couple of times but not throw any quackers. I’m also looking for the Wizard of Oz to get his #22 moving downhill.

Keys for the tailgate this week are all about the numbers. You never know just how many people may show up on a game day like Saturday. The weather won’t hamper people from moving around like the rain in the opener. The 2:30 start time will also bring more people downtown even if they didn’t pay the (at least) $125.00 ticket price. Plan on more than you think is the best rule. Plan on a menu item that can be quickly made when extras show up.

  • Since the multi-colored Ducks are flying into town, I went with a bird theme for the tailgate. I even persuaded former Husker baseball pitcher, Josh Roeder to give up his recipe for Pheasant Dunkers. In case you don’t remember, Josh and his beard were famous on the baseball bump for saves. He was the closer extraordinaire! In fact, he racked up a record 33 career saves for Big Red. I got to interview Josh and his mother, Debbie, last year and she says he’s quite handy in the kitchen.  These dunkers can be cut up ahead of time and they take only a couple minutes to fry up. This makes it ideal for pulling them out on an as needed basis as people roll up to your tailgate.

    PHEASANT DUNKERS

    Ingredients:

    1 pack of pheasant breast

    3 eggs

    1 container plain bread crumbs

    1-2 tsp garlic powder

    1-2 tsp onion powder

    Salt and pepper to taste

    Canola oil for frying

    Preheat an inch of canola oil in a frying pan to 350 degrees (med-high) heat. In a bowl add eggs, garlic and onion powder, salt and pepper and whisk together. Cut the breast into strips and place them in the bowl to soak for a couple minutes. In a separate bowl or plate, sprinkle a good amount of bread crumbs. Roll each pheasant strip in the crumbs until fully covered. Using tongs, place the strip in the crumbs until fully covered. Place the strip in the hot oil and fry until golden brown, approximately 2-3 minutes on each side. Drain on a paper towel and serve with your favorite dipping sauce.

    I migrated to something a little nicer to ingest. (see what I did there?) The Duck Call Shooter recipe can be found here. My Duck Call jello shot recipe involves a small package of cranberry jello, 4 ounces water, 4 ounces pineapple juice and 3/4 cup Malibu (or coconut) rum. Heat the water and juice and dissolve the jello. Add in the Malibu rum and pour into cups and chill. These aren’t quite as volatile as the other drinks mentioned, but I’m hoping the Oregon Ducks won’t volatile either.
