Nebraska Football Tailgate fun as Bethune-Cookman comes to town

Nebraska football tailgaters should be in a better mood this week after the win, and the Huskers should make it two in a row against Bethune-Cookman.

WOOHOO a Nebraska football WIN still feels great! I’d almost forgotten how it felt to wake up on Sunday with a smile on my face and race out to grab the Sunday paper sports section. Yes, I still support print media. You should too. So many uses for newspaper and there’s always recycling. The Monday press conference was smile-inducing too. In case you missed it, you can catch highlights here.

I’m not gonna lie, it felt good to see the Cornhuskers beat – convincingly beat – a team that previously had no problem hanging a lot of points on the Nebraska defense. I’m not going to pretend their defensive woes are over. I’m dazed by a win but not crazed.

It was good news to see some more Husker Blackshirts handed out too. In case you missed it, Tre Neal, Carlos Davis, Khalil Davis, Lamar Jackson, and Ben Stille were given new jerseys. Ben Stille gave his back stating that he felt he didn’t quite deserve it yet. Good on ya young man!

Another good kernel of news is that Nebraska Cornhusker Mick Stoltenberg finally will make it back onto the field for some snaps. His large presence has been missed in that defensive line. It won’t be a lot of snaps but it’s the perfect time for the Nebraska senior and captain to test out some things (like his knee) in real time situations.

Bethune-Cookman comes to town from Daytona, Florida. It seems a little like rinse and repeat of Nebraska opponents as they are the Wildcats, and their colors are maroon and gold. Fortunately, there isn’t a boastful bald coach or a 7-hour drive involved.

Nebraska takes the field on Saturday at 11 am. If you can’t make it out to tailgate in the projected high of 63 degrees and sunny day, set your DVR for BTN. I suspect a lot of DVR will happen as this had originally been a bye week for the Huskers, and as every good football lovin’ bride knows, it would be wrong to set the date on a game day.

Speaking of a morning tailgate (and you know how I love them) this week we’re going simple again. Ham Egg & Cheese sliders are on our Nebraska tailgate menu. Cut biscuits or rolls in half. Fry eggs with the yolks broken. Toast the rolls with butter on a griddle and then assemble the sandwich with a light Dijon mustard. Kick it up a notch with creole mustard if you like. I cover the sandwiches in a glass dish and warm in the oven for the cheese to get all melty.

The bonus for these morning sandwiches is that even cooled they are good. And when Nebraska is on a win streak, everyone sticks around the tailgate longer. These sandwich options create a winning second round. Kind of like what this week will be for the Huskers.

As for beverages we are breaking out the champagne of course! The Huskers won and we may as well celebrate. Mimosas are made by simply adding orange juice. To add some Nebraska color, mix cranberry juice instead. Get all kinds of crazy and put both together!

My spooktacular October cocktail is my Loaded Apple Cider Mimosa. Dip the rim of the glass into gooey caramel (the kind you pour on ice cream) and then dip into a cinnamon sugar mixture to coat the entire rim. Add 1 ounce of caramel vodka, 2 ounces Apple Cider and 4 ounces Champagne. This one works with warm or cold apple cider. Toss in a few cranberries for the dash of Nebraska red, or an orange garnish on the edge. This one, much like Halloween spells, can sneak up on you so be wary.
