Nebraska football tailgate week 2: Flocking to Oregon
By Kelli Anne
The Nebraska football team is headed out to the pacific northwest, so here are some great tailgating ideas for rolling over the Ducks.
It wasn’t pretty but it was a WIN. Personally, I miss the days of utter domination but oh well. Nebraska football fans probably weren’t prepared for how well Arkansas State played, nor were they pleased with the “no comment” from Coach Diaco after the game, but ultimately we’ll take the W and move on.
On to the next hot topic, as in flaming hot topic. Oregon is literally on fire. The Ducks football team even had to practice at different facilities this week due to air quality issues. There is actually a committee that makes these decisions for the NCAA. They will determine whether the Huskers even get to play. I get it. Safety first.
The Ducks crushed last week’s opponent but I’ve heard some people comment that it was a “community college” level team. That’s a stretch, but Oregon has always had lots of offense. Those Ducks can fly!
I’m hoping that Nebraska can answer accordingly by testing the duck (like you would test a duck in the oven) in the middle and on the edges. There is a freshman on the corner and in the middle of the Oregon team and hopefully the Huskers “burn” them often. I like Tanner Lee with the ball and he rarely throws “a duck” to Morgan or Pierson-El.
Now here what else is cooking. While I was researching duck-themed drinks, I found a bar called Duck Duck, located in Destin Harbor, Florida, with a nest full of Duck cocktail recipes.
Keeping with the Duck theme, I picked their drink “the Ugly Duck” in hopes that Oregon looks ugly at the end of the game after a Cornhusker victory! Mix 1 package of lime jello with a cup of hot water. Stir until Jello dissolves. Mix in 1/2 cup of Goose vodka and 1/4 cup of triple sec. Pour into shot cups and chill!
This week’s game is at 3:30 CDT on FOX. This is a homegate for Husker fans. Take advantage of home kitchen advantages and whip up plenty of appetizers. Quacker Jacks is a popcorn (you see how I got the CORN in there?) and duck bacon mixture that is absolutely finger lickin’ goodness for munching on during the first half.
Did you know Duck Fat is a thing? It is. And it’s a healthy thing. Who knew? These Duck Fat Roasted Potatoes (from Maple Leaf Farms) disappeared quickly during my recipe test phase but they are an easy side dish to serve alongside burgers from the grill at halftime. I mean the Nebraska Beef has to be the MAIN DISH here!
If you have a favorite tailgate recipe feel free to share with us! Get your rest this weekend, it’s an early tailgate next weekend for Big Red.
I am looking forward to watching the Husker faithful make the trip to Eugene and enjoy the Duck hospitality.
I know there was a lot of yellow and green in Lincoln last year. Send your tailgate photos to me on Twitter @Kelian_NE or @thehuskercorner so we can share them. Travel safely, be great fans, roast those Ducks and GO BIG RED!
