Husker Tailgate Recipes: Week 2 Wyoming

It’s an early Husker game, 11 am on ESPN2.

I even hate saying “morning game” out loud. I’m not a morning person, but I will saddle up and be one for BIG RED Football.  To take a half full perspective, at least it won’t take until 1 am to get home through traffic. (Mom always said leave things with a positive spin).

Last week was certainly emotional for the Cornhuskers and the fans. I’ll admit my eyes were leaking a couple of times during the game. Fantastic tributes to Sam Foltz were everywhere. Kudos to University doing things at a top notch level. Hats off also to Fresno State for doing the right thing and declining the penalty as well.

Now it’s time for the Wyoming Cowboys to ride into town. They too experienced some rain last week. Their football game was delayed until a 10:20 start time. I believe they finished the game around 2:30 am following a triple overtime against Northern Illinois. Coincidentally, with night game traffic  that’s about the same time I think my head finally hit the pillow.

Wyoming seems to have done well fixing their horrible run defense from last year. Last week they gave up only 3.6 yards per rush with most taking place on sweep plays.

Husker special teams will need to play better as Wyoming had 2 return touchdown runs (although both called back on penalties) and a 48-yard punt return which led them to their 1st touchdown of the game. Jordan Westerkamp will need to stay clear of bouncing balls or just catch it. I’d appreciate seeing more of DPE on the field but it needs to happen when it’s good for him.

Nebraska corners will be tested again (although WOWZERS Keiron Williams!) because QB Josh Allen likes throwing the rock to seniors Jake Maulhardt and Tanner Gentry, Each receiver logged in over 100 yards. Big Red is favored by 3 touchdowns. I don’t think it will be a walk in the park because head coach, Craig Bohl is wiley. I see Nebraska winning but just want to see more out of the offense before I proclaim an easy game on the horizon.

But enough Husker football talk, let’s get to the menu already! There are a kagillion — yes, that a legit measuring term in my world —breakfast casserole recipes. My favorite was featured last year. It seems like you barely get parked, get to the tailgate, open a beverage and it’s already time to head into the game. I’m using that to inspire the menu with Breakfast Kabobs on the go! It’s something that you can make ahead of time, or let people build on their own, or you can cook them quickly on the grill that morning.

BREAKFAST KABOBS

1 cup milk

2 large eggs

1 ½ teaspoon cinnamon

1 teaspoon vanilla

4 pieces of Texas Toast, cubed

1 pint of strawberries, remove stems

1 cup grapes

Whisk the first four ingredients together. The more whipped the better. Drop the bread cubes into the milk and allow them to coat with batter on all sides. Heat butter in a skillet over medium heat and cook the cubes a couple minutes on each side until they are golden brown. Skewer the cubes alternating with the fruit and go!

It’s not “5 o’clock somewhere” with this Husker kick off time but there will be plenty of time for a red beer, a Bloody Mary or a Mimosa. I like to switch it up for early games by mixing things in my coffee. There are several different flavors of Bailey’s, and Kahlua has a Pumpkin flavor. To think outside the box, add in Mudslide or, my personal favorite, Hot Sex.

If you don’t go to Lincoln, you can catch the game on tv or radio.  There are going to be lots of Wyoming fans in town so be sure to save room at your tailgate. Check out CJ Johnson, a wide receiver for the Cowboys. He’s the son of Husker receiver Clester Johnson who played on the National Championship teams in 94 and 95. Have a great time and GO BIG RED!
