Husker Football Tailgate: Week 10 – Michigan State

The Spartans are on their way to Lincoln. That just has a foreboding sense to it. But history has proven, the Spartans can be beat. Coach Riley has orchestrated a lot of upsets in his day. He led the Beavers over the Trojans in 2006, so why not lead the Huskers to victory over the Spartans? I’ve always said there is nothing more dangerous than a team with nothing to lose. Regardless of who comes to town, I will do MY job as a fan and put my BUTT in a seat and cheer LOUDLY for the Red and White!
Now is not the time to give up on the BIG RED. There will be recruits on the sidelines. I’ve never thought real Nebraska fans were only fans of winning. So, if you need a little home grown inspiration, check out the music of Nebraska’s own Heidi Merrill and Cornhusker Strong. If that doesn’t do it, check out Husker Jack Gangwish thanking the fans who traveled to Purdue.
Enough of the lecture. When your team isn’t winning, and it’s a rebuilding year, you can always count on one thing in Lincoln on gameday, and that’s good people are still tailgating. This is really the last game to do that this year since Iowa is an early start and during Thanksgiving break so you better make the most of it.
Since there will be tailgating all afternoon, there will be lots of time for munching and grilling. This week I was asked to put in my Woolly Mammoth burger recipe. It’s a throwback to the Omaha Mammoth FXFL team tailgate days. It does take some time at the grill but if you want to prepare it ahead of time and keep it separately in the warmers, that works too.

Woolly Mammoth Burgers
1 lb hamburger
1/4 c minced onions
1 Tbsp Lawry’s seasoned salt
1 8 oz flavored cream cheese (bacon & scallion is my fav but Garlic works too)
1 large sweet onion, sliced into medium pieces
Fresh minced garlic to sauté with the onions
1/2 stick of butter

In a skillet on the grill, saute the onions and garlic in the butter (a great smell at a tailgate!). Mix the hamburger and spices together and patty them up. Let the cream cheese sit out at room temperature to soften. Grill up the burgers while your onions saute. Once your burger is to the desired temperature for you, place it on the bun and schmear the cream cheese on top. Then layer some of the sautéed onions on the cream cheese and there you go! It really doesn’t need any other condiments. Since it’s finally brisk weather, toss a little potato salad on the plate and boom!

There are a lot of green drinks out there if you are so inclined. Cooler weather has me leaning more toward red beers (just add tomato juice). But if you’re in the mood for a jello shot, there is something that goes with lime flavored jello – Margaritas! Just heat up 1 cup of margarita mix (the liquid kind, duh) and a package of green jello on the stove until it dissolves. Add 1/2 cup tequila and 1/4 cup of triple sec. Stir and pour into your cups and chill! You can also go the strawberry margarita mix route subbing strawberry gelatin and strawberry mix for a shot of the BIG RED!
