Husker Football Tailgate: Week 13 – Iowa

Yeah that photo has nothing to do with tailgating, I just like it when the HUSKERS pound on Iowa. I can’t believe it’s the last game of the season already. It flew by. But what’s NOT going to fly by is the yellow bird that comes to town Friday. I’m calling for another HUSKER upset! Even Vegas only has them favored by 1 and that’s a #3 ranked team…. #thingsthatmakeyougohmmmm

In light of the holiday season I’m crafting something to warm your tummy at the Big Red tailgate – CRANBERRY FIREBALL jello shots. Super easy, just mix 1 1/4 hot water with the cranberry jello. Stir until dissolved. Add in 3/4 cup of fireball and pour and CHILL! Just the right amount of chill and warm to get you through that chilly weather game!

With a 2:30 start I plan on getting my last piece of Valentino’s pizza or Runza inside Nebraska’s Memorial stadium so I’ll just be munching. In keeping with the cranberry theme, I have a recipe I found for a type of chex mix. If you want to print off the official recipe click here. I toss in some extras because it’s a sweet mix and you can always add red and white candies to most anything.

CRANBERRY-NUT CINNAMON CHEX MIX

6 cups cinnamon chex

1 c walnut halves

1/4 c packed brown sugar

1/4 c frozen orange jice concentrate

2 Tbsp vegetable oil

1/2 cup sweetened dried cranberries

In a large bowl, mix cereal and walnuts. in a big measuring cup, microwave the brown sugar, orange juice concentrate and oil on high for 1 minute.  Stir and then heat for another minute stirring after 30 seconds.  Once it’s hot through it all, pour over the cereal mixture to evenly coat it. Then put all of it in the microwave for 5 more minutes stirring every 2 minutes.  When it’s done, stir in the cranberries and spread on waxed paper to cool. Once cool I add extras like chocolate candies or peanuts or cashews or dried fruit.

Weather report says it’s going to be partly sunny and windy for the HUSKER football game so make sure to wear your layers. Security for the game will also be stepped up so get to the gates early. There are some that are going to be closed as well. You will have to open up your jacket. Yes, it may be inconvenient but remember, it’s for a good reason.

Take your hand warmers, cheer loudly, and send the Nebraska Cornhusker seniors out on a winning note. This is not only to ruin Iowa’s perfect season but to become bowl eligible. I am proud of how this team has hung together and will always be a fan (not just a fan of winning). GO BIG RED!!!
