Nebraska vs Illinois: Recipe for Tailgate Success



It’s always tough to come up with a menu for an 11 am kickoff. It’s not time for breakfast but definitely not quite lunchtime yet. When Nebraska and Illinois battle on the field coaching could be the difference. So we decided to go with something inspired by the head coach of the Huskers, Bo Pelini.

The Bo Penini

Bo Pelini is not a complex guy. He is outspoken, strong spirited, and can give you heartburn. Thus, the Bo Penini is born. Here is what you will need to get started.

1 pounds pastrami
1 pound roast beef
8 slices of provolone cheese
8 slices swiss cheese
olive oil
loaf of sourdough bread

Brush one side of bread with olive oil.  Also oil grate on the grill. Make sure grill it on low flame.

On bottom slice spread horseradish on side that is not oiled. Place slice of provolone cheese. Top with roast beef, then pastrami, then Swiss cheese. On the top slice of bread spread horseradish on side that is not oiled.

Put panini on grill and put grill press on top. Grill until bread is golden brown in color. Carefully flip penini. Grill until bread is golden brown and serve.

Now for the beverage of choice. Let’s keep it clean and go with a non alcoholic drink this weekend. What am I thinking, we still don’t know what the defense is going to look like. Since penini’s are on the menu we should probably go with a beer instead of the hard stuff. Stella should do the trick.
