The Nebraska Cornhuskers welcome The Southern Miss Golden Eagles to Lincoln tomorrow for a 5pm kickoff. We at Husker Corner understand that it’s important to welcome their fans to the tailgate party with great food, drinks, and music. The same goes for the guests who are coming over to your place for the Husker Party. Here is this week’s recipe for tailgate success.
Cajuns don’t just reside in Louisiana, they are also native to the state of Mississippi. I lived there for a few years, and know plenty of great Southern Miss fans who love their Cajun food. On the menu for tomorrow’s game is grilled Cajun Chicken Sandwiches.
10 boneless skinless chicken breast halves
1 teaspoon salt
1 teaspoon pepper
2 cayenne peppers
3/4 cups lemon juice
1/4 teaspoon garlic salt
3 tablespoons Greek seasoning
1/4 cup olive oil
Finely chop cayenne peppers. Combine peppers, salt, pepper, garlic salt, and Greek seasoning into bowl and mix. Combine half of the seasoning mix with lemon juice. Marinate the chicken overnight or for at least two hours in a large pan.
Preheat grill, drain marinade, and brush grill with oil. Rub remaining dry seasoning onto chicken. Grill each side for 6-9 mintes or until juices run clear. Lightly brush sourdough with grill.
Add whatever condiments you wish.
Now that we have the food taken care of it’s time to focus on the beverages. Last week it was a mixed drink, this week an IPA. Go with Sierra Navada’s Torpedo IPA. Great drink to accompany the spicy sandwich.
